I started this blog because I often get asked for my recipes by friends, family, and customers. I love to cook and bake and I recently made a commitment to myself (and my husband Todd) to cook and bake more. Because of two long-distance moves and a major career change for both of us in the past 9 months, we've relied a bit too much on fast food, pizza delivery, and local taquerias.
Todd loves my cooking but is also very honest when something I prepare doesn't meet our usual standards. I will make a point to share mistakes made, lessons learned, and tips for doing better next time when things don't quite go right or could at least be improved. Reader comments and feedback are always appreciated as are suggestions for future recipes.
Todd and I are both hypoglycemic so, at times, our menus may seem protein centric. One of our favorite snacky style meals is sliced salami (Gallo is our favorite), sliced cheese, cream cheese wedges, pickles/relishes, and mustard. We only use Dreamfields Pasta due to the low glycemic load. I do cook small amounts of rice, potatoes, and other starches for Todd, but I rarely indulge myself. My one weakness is really good fresh baked bread and bread baking is one of my true pleasures in life. Still, I limit my consumption. My biggest challenge is keeping our menus simple yet interesting enough to not get bored on a diet that consists mainly of meat, cheese, eggs, and low starch vegetables.
I do bake for our customers in our shop so there will be recipes for cookies, bars, and other treats from time to time.
Another challenge is getting the best quality ingredients for the lowest price. Deep down I am a true Tightwad and it pains me to spend money I don't have to. Part of my mission here is to track down sources for high quality/low price when it comes to what we consider every day ingredients. We do have our occasional splurges (did I mention that we love steak?).
