A Quick Brunch and Thoughts About Leftovers

We had a fun gambling evening last night with one of our high school friends who was in town and I got to sleep in again today because I have another day off. Woo hoo! Poor Todd came in from the shop around 1:00 starving and begged for some food.

We still have the majority of the Cauliflower Au Gratin I made a few days ago in the frig. I heated up a serving in the microwave and paired it with a few eggs over easy and sourdough toast for a meal in less than 10 minutes. He devoured it in record time.

The rest of the casserole will be split up into small freezer containers for future use. We love leftover casserole, soups, and stews, but if we end up eating the same thing day after day, much of it is probably going to go to waste. Next time I will probably cut that recipe in half if it's just for the two of us. The original recipe looks to be about 8-10 small side servings.

Todd and I are in a mixed marriage when it comes to leftovers. He refuses to eat leftover seafood and I loathe anything containing leftover beef (except things like stew). It's a texture issue for both of us. When cooking seafood or burgers, we make just enough for one meal. Leftover steak and roast go into the pressure cooker to make shredded taco meat or stew. Large chunks of pork are treated the same way, although I do like leftover pork for the most part and there's always Carnitas.

We grilled a couple huge T-Bones earlier this week. We were starving and a bit overambitious so there is a fair amount left. It's going into the pressure cooker with onion and green chilies and we will be having tacos. Other than cooking the meat the only things left to do are cook a few corn tortillas in the deep fryer and slice some avocado, lettuce and tomato. We have preshredded cheese, sour cream, and salsa in the frig. Dinner in 30 minutes!
